How to control irritable bowel disease on a road trip?

This Friday my boyfriend and I are going on a 6 hour road trip. I have horrible IBS and I find that if we're stuck in traffic or if we're not in a scenic area, I get attacks and waves of nausea and it sucks. I'm worried we're not gonna be in the scenic areas (We're going from Pittsburgh PA to Lexington KY - our route is through Ohio on mainly I-70 west and I-71 south). I know that coffee triggers nausea, but I have an addiction and can't go without at least one cup. How can I manage IBS on the road trip?
